Savory Millet Porridge with Miso, Shiitake & Greens (Gut-healing + Grounding)

Ingredients (Serves 2):

  • ½ cup millet (rinsed and soaked overnight)

  • 2 ½ cups water or broth (home-made or made according to instructions ie bone broth concentrate)

  • 2 dried shiitake mushrooms (soaked and sliced)

  • 1 clove garlic (minced)

  • 1 tsp fresh ginger (grated)

  • 1 tbsp white or yellow miso paste

  • 1 tsp sesame oil

  • 1 cup chopped greens (e.g., bok choy, spinach, or kale)

  • Garnish: spring onion, sesame seeds, a dash of tamari

Instructions:

  1. In a pot, combine millet, water/broth, garlic, ginger, and shiitake.

  2. Bring to a boil, reduce heat, and simmer for 25–30 minutes, stirring occasionally, until soft and porridge-like.

  3. In the final 5 minutes, add chopped greens.

  4. Remove from heat. In a bowl, dissolve miso paste with a little hot liquid from the porridge, then stir back into the pot.

  5. Finish with sesame oil and garnish with spring onion and sesame seeds.

Why it's great for Autumn: Miso supports gut flora and immunity, shiitake boosts Lung qi, and millet provides a warming, Spleen-nourishing base.
