Elderberry Gummies (Immune Tonic)
All the Elderberry goodness in a tasty gummy!
This recipe can also be adapted to add other herbs of your choice
Ingredients:
¾ cup apple juice, chilled
3 tbsp gelatin
4 cups water
¼ cup elderberry *approx 50g
¼ cup honey
Bloom gelatin by slowly sprinkling it into the chilled apple juice and then stirring, allow it to sit until it has swelled, around 15 minutes,
it should be a gel like consistency.
To make an elderberry decoction, place elderberries into a saucepan with 4 cups of water. Bring to a simmer and reduce by half until you have 2 cups of liquid, then strain. Place elderberry decoction into a small saucepan, add in honey and stir until dissolved. *you can also use my Elderberry Elixir in my previous post!
Slowly whisk in gelatin mixture until incorporated. Pour mixture into 1 ounce* silicone molds to set. If you do not have silicone molds, you can line a small pan with parchment paper and pour into this. Once hardened, remove gummies from tray. You can cut cubes from your pan, aim for 1 ounce. Place these into an airtight container. Store in fridge and use within 2 weeks, or store in freeze for up to 6 months.
Children over the age of 1 can use up to one gummy, 3 times a day. Adults can take 2 to 3 gummies, up to 3 times a day.
* One 1-ounce (28 gram) gummy will contain 1.5 grams of elderberry
