Elderberry Honey (Immune Tonic)

Infused honey makes for a delicious treat, carrying its sweet and nourishing immune benefits to the body. Drizzle on top of pancakes, granola, or anything else you so choose!

Ingredients:

Elderberries

Local raw honey

Directions:

Fill a jar 1/4-1/2 full with dried elderberries and then fill with honey.

Poke with a clean knife or chopstick to mix and remove any air bubbles. Let mixture infuse for a week to a month, depending on preferred strength, tasting occasionally until it is perfectly suited to your taste buds.

Strain if desired, but the elderberries should soften up a bit in the honey and can be left in if you so choose!

Notes:

This recipe can also be adapted to add other herbs of your choice, ie garlic, rosemary, thyme, horseradish, lemon peel etc
