Stir-fried Bok Choy, Garlic, and Sesame over Brown Rice

Ingredients (serves 2):

  • 1 bunch baby bok choy (sliced)

  • 2 cloves garlic (sliced)

  • 1 tbsp sesame oil

  • 1 tsp tamari

  • 1 tsp rice vinegar or lemon juice

  • 1 cup cooked brown rice

  • 1 tbsp toasted sesame seeds

Instructions:

  1. Heat sesame oil in a pan and sauté garlic until fragrant.

  2. Add bok choy and stir-fry for 3–4 minutes until wilted but crisp.

  3. Add tamari and rice vinegar. Toss to coat.

  4. Serve over warm brown rice and sprinkle with sesame seeds.
