Stir-fried Bok Choy, Garlic, and Sesame over Brown Rice
Ingredients (serves 2):
1 bunch baby bok choy (sliced)
2 cloves garlic (sliced)
1 tbsp sesame oil
1 tsp tamari
1 tsp rice vinegar or lemon juice
1 cup cooked brown rice
1 tbsp toasted sesame seeds
Instructions:
Heat sesame oil in a pan and sauté garlic until fragrant.
Add bok choy and stir-fry for 3–4 minutes until wilted but crisp.
Add tamari and rice vinegar. Toss to coat.
Serve over warm brown rice and sprinkle with sesame seeds.
